St Honore Cake – $20 | Save on Foods | Calgary

The best birthday cake ever is a St Honore cake. They’re expensive and hard to find, but my wife beat both odds finding this gorgeous St Honore Cake in Calgary.

Growing up, we called the cakes my dad would bring home for special occasions a “bon bon cake.” Perhaps because my dad got them from the Bon Bon Bakery in Vancouver. I have since come to know this childhood birthday fantasy of mine as a St Honore Cake.

I haven’t always gotten one in my grown up years on my birthday, but this year scored the big one when my wife found a St Honore cake at Save-on-Foods in Calgary.

The St. Honore cake is named for the French patron saint of bakers and pastry chefs, Saint Honoré or Honoratus (d. 600 AD), bishop of Amiens.

This classic French dessert is a circle of puff pastry at its base with a ring of pâte à choux piped on the outer edge. After the base is baked small cream puffs are dipped in caramelized sugar and attached side by side on top of the circle of the pâte à choux. This base is traditionally filled with crème chiboust and finished with whipped cream using a special St. Honoré piping tip.

That’s what I’m talking about.

They’re usually hard to find, and they’re expensive when you grab them from a proper baker. On this birthday search, my wife wandered in to Save on Foods and asked at the bakery counter if they had any St Honore cakes. The young baker had, in fact, just made one 20 minutes ago and my wife promptly scooped up the 6 inch dream and whisked it home.

The crispy, creamy, sweet, crunchy, gorgeousness was so perfect.

I had 2 slices. Birthday achievement unlocked.
